Eggplant chili powder/Brinjal Chilli Powder / Eggplant Kaaram Podi


  • Brinjal / EggPlant - 250gm
  • Onion - 1
  • Oil - 2 Tbsp
  • Bengal gram/ Chana Dal- 3 Spoons
  • Dry Coconut - 20gm
  • Sesame Seeds - 5 tbsp
  • Garlic - 10gm
  • Red Chilli - 10-15
  • Coriander Seeds / Cilantro - 10gm
  • Roasted split chickpeas - 2 Spoons
  • Turmeric - 1 Spoon
  • Salt as per taste


First take a pan and put it on the stove. Now roast coriander seeds, bengal gram, sesame seeds and dry coconut pieces on medium flame. Once it changes its color and smells good remove the pan and let it cool. Now take another pan and pour oil and let it heat on medium flame. Now add washed and sliced brinjal/eggplant. Fry it till it becomes soft and remove the eggplant in a plate and keep it aside. Add chopped onions in the same pan as we have oil in it to fry for some time. Take all the roasted ingredients, garlic, salt, red chilies, roasted split chickpeas and grind it like a powder. Once the onion turns golden color add fried eggplant/brinjal pieces and sauté it well.


Now add the grinded powder to it and mix well. Now we will have colorful and yummy eggplant chilli powder with a great smell. Yummy Yummy Eggplant/Brinjal Chilli Powder is ready to serve with hot rice.
