Required Ingredients:
  • Oil - 3-4 tsp
  • White Eggplants/ White Brinjal - 250g
  • Green peas - 50 g
  • Onion - 1
  • Mustard Seeds - 1 spoon
  • Cumin Seeds - 1 spoon
  • Ginger garlic paste - 1 tsp
  • Salt to taste
  • Turmeric - 1 tsp
  • Chili Powder - 2 tsp
  • Garam masala - 1 tsp
  • Some curry leaves
  • Few coriander leaves
  • Water - 1 cup
  • Amchur - 1 spoon
 
First, the green peas should be soaked in water (6-8 hours). Put a kadai and light the stove and add oil to it and heat it. After the oil is heated, add mustard seeds and cumin seeds and fry it. After frying well, add onion slices and fry well. After the onion becomes soft, add ginger and garlic paste and fry until the raw smell disappears. Now wash it well, cut the eggplant/brinjal into pieces and put it in it. Also drain the soaked green peas and add it to the curry and fry it well. After frying a little, add turmeric, salt and pepper to it, cover and fry for 10 minutes and fry well.
 
Then add curry leaves and fry well. Now add amchur and mix well and fry for 5 minutes by covering with a lid.
 
After cooking well, pour a cup of water in it and whisk well. Green peas are also cooked soft. Curry pulp becomes pulpy due to boiling water. If you want the curry to be a little fried, don't add the water. Add some garam masala and mix well.
  
After the water is reduced and the brinjal piece is cooked well, the curry is pulpy. Once the curry is cooked well then curry will release oil from it. Now garnish the curry with coriander. That's it, the delicious Eggplant Green Battani Curry/ Brinjal Green Peas curry is ready. A very good and sweet aroma, colorful and pleasing to the eyes and good taste.
