Required Ingredients:
  • Eggs - 3
  • Tomato - 2
  • Onion - 1
  • Mustard Seeds - 1 spoon
  • Cumin Seeds - 1 spoon
  • Green Chillies – 2
  • Salt to taste
  • Chili Powder - 2 tsp
  • Ginger garlic paste - 1 tsp
  • Garam masala - 1 tsp
  • Few Curry Leaves
  • Few coriander leaves
  
First put a kadai on the stove and heat it on medium/low flame. Now add oil and heat it. After the oil is heated, add mustard seeds and cumin seeds and fry it. Now add thinly sliced onions and green chillies and fry till the raw smell goes away. After the onion pieces are fried well, add some salt, turmeric and chilli powder and mix well. After adding salt and pepper/chilli powder to the onion, add curry leaves and garlic paste and fry well. Fry till the raw smell goes away. In the meantime, cut the tomato into pieces and put it in a mixer jar to make a paste. Now add tomato paste and fry well. The tomato water will reduce and the curry will thicken and turn red in color.
 
After frying the tomato well, break the eggs shell and put egg in it. After stirring for 2 minutes, it should be mixed gently. Mix it little by little. It comes in small pieces. Stir until the raw smell disappears. If you keep mixing like this, it will come out like a piece. After the curry is fried well, add some garam masala and mix it well.
 
Once the egg is fried well, taste it. If it requires add a little salt in the curry. Finally add coriander leaves and garnish. After that very delicious egg burji is ready. This egg curry is very good with hot rice and chapati. Be sure to do it and tell me how it goes.
