First take the chicken and wash it well and keep it aside. Add a spoonful of salt, turmeric, curd, ginger and garlic paste to it, mix well and keep it aside.

Now add cashews in a bowl and soak them in water. Also, peel the onions and finely chop them and keep them aside.

Now take a pan and heat two spoons of oil in it. After the oil heats up, add chopped onion pieces and fry till it turns brown. Then turn off the stove and take out the onion and let it cool down. Take the washed and cleaned mint leaves and put them in a mixing jar. Also add fried onion slices and green chillies. Take the soaked cashews and put them in the prepared mixy jar. Then grind all the ingredients into a smooth paste.

Now add the mint paste to the chicken and mix well. Mix it well so that it sticks to the pieces and cover it and keep it aside. If possible, marinate for 30 minutes. Marinating gives the chicken a good taste with salt and green chillies. Those who are short on time can cook immediately.

Now light the oven and put a pan and add three spoons of oil and heat it. After the oil is hot enough, fry shajeera in it. Now add the marinated chicken and mix well.

Add chicken and fry on a high flame. Mix and fry the chicken well till oil comes out of the curry.

Now the water comes out of the chicken. Cook well till the water reduces. Now add some roasted cumin powder, garam masala powder and coriander powder and mix well.

We have added mint so it smells a bit like peppermint/green smell/raw smell. If it is well cooked it will reduce the smell. As the water in the chicken has reduced, it should still be cooked on medium flame.

Now taste and add salt if needed. Also, if you like spicy food, add a little pepper powder to make it spicy. The curry will release the oil well. Those who eat curry hard/fried curry do not need to add water. But those who want it to be mushy/juicy and those who want more gravy should add a cup of water and cook it for 5 minutes on a high flame.

Finally add coriander leaves and mix well, turn off the stove and serve. Then the delicious Pudina Chicken is ready.
