Capsicum Carrot Curry | Healthy Carrot and Capsicum Curry | Capsicum Curry Recipe

Required Ingredients:
  • Capsicum - 2-3
  • Carrot - 5
  • Onion - 1
  • Cumin Seeds - 1 Spoon
  • Bengal Gram - 1 Spoon
  • Oil - 2 Spoons
  • Turmeric - 1 Spoon
  • Salt as per taste
  • Pepper Powder - 1 Spoon
  • Chilli Powder - 1-2 Spoons
  • Garlic Cloves - 2
  • Curry Leaves few

   
First peel the onion and chop into thin pieces and keep it aside. Now take out the seeds from the  capsicum and wash it in water and cut it into small pieces. Also take the carrot and remove the skin and grate it thinly and keep it aside.
   
Now light the oven and heat a pan. After heating the pan, add oil and heat it. After the oil heats up, add cumin seeds, Bengal gram and curry leaves and fry it. Then add finely chopped onion pieces and fry well.
  
After frying the onion pieces, add the garlic and fry it. Now add the capsicum pieces and fry. After the pieces are cooked, add salt, pepper and turmeric and mix well. Then add grated carrot and fry.
 
After the carrot is cooked well, add some pepper powder and mix well. Finally add coriander leaves and mix well. Then the delicious and healthy Carrot Capsicum Curry is ready.
