Purple Brinjal and Tomato Curry / Mixed Brinjal and Tomato Curry

Ingredients Required:

  1. Purple Brinjal - 250 gm (Long ones)
  2. Tomato - 250 gm
  3. Onion - 1
  4. Curry Leaves few
  5. Turmeric - 1 Spoon
  6. Mustard Seeds - 1 Spoon
  7. Cumin Seeds - 1 Spoon
  8. Salt - 1-2 Spoons
  9. Chilli Powder - 2-3 Spoons
  10. Oil - 3 Spoons
  11. Bengal Gram
  12. Ginger Garlic Paste - 1 Spoon
  13. Coriander Leaves
First light the oven/stove and put a pan on medium flame. Add oil to it and let it heat. Once it is heated add cumin seeds, mustard seeds, curry leaves, bengal gram, and let it fry. Now add chopped onion and fry it well. Add chopped brinjal and tomato and saute it well. Add salt and saute it. Once it is half cooked add 1 cup of water to it and cook till the gravy becomes thick. now add ginger garlic paste, chilli powder and cook for 3 minutes. Now add coriander leaves and keep the pan aside and turn off the stove. Serve with a yummy and tasty brinjal tomato curry.
