Required Ingredients:
  • Ridge Gourd - 500 g
  • Mustard Seeds - 1 spoon
  • Cumin Seeds - 2 tsp
  • Bengal gram / chana dal - 1 tsp
  • Oil - 3 tsp
  • Turmeric - 1 spoon
  • Salt to taste
  • Chili Powder - 2 tsp
  • Coriander Seeds - 2 tsp
  • Dry Red Chillies – 5
  • Fresh coconut - 50 g
  • Sesame seeds - 2 spoons
  • Some curry leaves
  • Few coriander leaves
  • Garlic Cloves - 6
  
Peel the Ridge Gourd first, wash it well and cut it into small pieces and keep it aside. Cut an onion into small pieces and keep aside. Now light the Stove and put a pan in it and heat it. After the oil is hot, add mustard seeds, cumin seeds and Bengal Gram / Chana Dal and fry well. Now add onion slices and fry well. Before this, take a small pan and fry coriander seeds in it without adding oil and let it cool for sometime. Then fry the sesame seeds a little in a pan and keep aside and let it cool. If sesame seeds are fried a little it smells good. Allow the coriander seeds and sesame seeds to cool. Now add the roasted coriander, sesame seeds, dry chillies and garlic cloves in a jar and grind them to a fine powder. Keep that powder aside and now add fresh coconut pieces in a jar and make a soft paste and keep it aside. After the onion is fried well, add pieces of ridge gourd and let it fry well. Adding a little salt (1/2 tsp) will make the curry watery and soft. Now add turmeric and chilli powder and mix well. You can also add a little salt to taste. Ridge gourd will be cooked and become a little soft. That's why we add salt and Chilli powder at the end so that the salt is sufficient. While the curry releases the oil, add the coriander powder, coconut paste and mix well. After frying a little, add curry leaves and mix well. Finally turn off the stove and before removing the pan add coriander leaves and garnish. After that very delicious Ridge gourd curry is ready. Eat it in hot rice and you eat will more rice with this curry than your regular meal. Garlic gives a good smell. People who don't like Ridge gourd can make it like this.
